Mornings around our house are usually mass chaos. No matter what I do to try to be organized the night before, mornings don’t seem to change.

In fact, we have a little celebration in the car on the way to school on those rare days where I didn’t have to turn into “raging maniac mom” to get everyone in gear. I’ll say, those little celebrations don’t happen too often. That’s not something I’m necessarily proud of.

So, would you judge me if I told you that sometimes to ease my guilt for yelling, I let my kids have cookies for breakfast? OK, there has been a time or two where those cookies were Girl Scout Cookies, but for the most part, cookies for breakfast around our house consist of the oatmeal banana breakfast variety. I love these cookies because they are easy to make and they are fairly nutritious. When raging maniac mom spends her morning, ahem, yelling using her outside voice, inside, saying yes to cookies for breakfast seems to erase all that.

Hearty Oatmeal Banana Breakfast Cookies

Cookies for breakfast? Yes indeed, especially when they are these protein packed, nutritious breakfast cookies!

Ingredients

  • 1 1/2 cups quick cooking oats
  • 2 ripe bananas mashed
  • 1/2 cup Rice Krispies cereal
  • 1/4 cup peanut butter creamy or crunchy
  • 1/4 cup pure honey
  • 1/4 cup Craisins
  • 1 Tablespoon vanilla

Instructions

  • Preheat oven to 350°F

  • Place all ingredients in a large bowl and stir with a wooden spoon until well incorporated.

  • Line a cookie sheet with parchment paper.

  • Place rounded spoonfuls of dough onto the parchment lined cookie sheet. Flatten with a spoon.

  • Bake in preheated oven for 25 minutes. Remove and let set for 3 minutes on the baking sheet before removing to a cooling rack.

    “Raging maniac mom” – I think I’m going to have to borrow that title. I can’t tell you how good it feels to know that I’m not the only one who has lots of mornings like that. Like you, I’m not proud of it, but it helps to know I’m not alone. =) I often make a batch of muffins or scones that we can eat over several days, but I’m going to have to add breakfast cookies into the rotation.

    I know what you mean about chaos. Before we had Liam, everything was hunky-dory and now we’re late to everything and running around like mad people.     hah Mornings are pretty crazy here with two little ones and that doesn’t even involve getting them ready for school yet! (Oy vey!) Cookies for breakfast are a wonderful idea..my son would love these. Im always looking for different options to feed him..now that he knows what he likes, the little monkey is getting picky & saying no to what I give him sometimes…however, he never says no to cookies..so smart! 🙂

      Hi Meghan –
      I think you could use sunbutter or even Biscoff cookie butter. Is there a product of peanut butter consistency that you can have? I would suggest trying one of those as a substitution.

    I made these today, and 25 minutes was a little too long in my oven 🙁 The bottoms burned, but I was able to get the tops off to taste and will be making these again with shorter bake time. Thank you for sharing the recipe.

    i substituted the honey for some applesauce, and the rice krispies for rice chex. it adds a bit more crunch! also chocolate chips add just the right amount of sweet to these cookies.

      I was looking for something gluten free that I could eat in my car with one hand! I used gluten free rice krispies and have them in the oven now. They smell delicious! Oh and I added a handful of mini chocolate chips to them! Thanks for the recipe!!
