Moon Cheeseis an amazing invention! It’s real cheese that was put through a vacuum chamber. This process makes it crunchy and shelf-stable. I always keep a few bags on hand so I can grab some and take it with as a portable low-carb snack on busy days.

I used this Moon Cheese as the crunchy exterior coating on the sausage balls.

If you don’t have Moon Cheese, you can also use unflavored pork rind crumbs for the crunchy coating. This will give it less protein, but it will still be low-carb.

1. Preheat the oven to 400 degrees.

2. Add all of the ingredients into a large mixing bowl, and knead them together with your hands until completely combined.

3. Roll the mixture into 35 even sized balls, about an inch in diameter.
